Researchers from the University of Queensland, Australia, conducted a study and found that enticing names for plant-based menu items that illustrate flavor, texture, and place of origin can increase people’s tendency to order the food item, while bland names decrease the likelihood. According to the investigators, the description “a juicy American burger” is more appealing to customers than “vegan burger.” And “tasty Italian vegetable lasagna” is likely to get more orders than “vegetable lasagna.”

Another potential change that could further build the trend to increase plant-based food orders is the use of appealing imagery for the vegan dish.

The researchers also noted that transitioning to vegan “for even the smallest of market segments can make a meaningful contribution to climate change mitigation.”
